In Thailand, you can order noodle soup of various kinds from people working on boats. The noodles could be rolled noodles, glass noodles, thin rice noodles or even flat rice noodles with all kinds of sweet, salty, sour and umami flavors. It’s probably why one version of these noodle soups with flat rice noodles, some offal and pork in a black soup is simply called boat noodles. It’s a delicious dish that comes in a small bowl.
Dodee Paidang has several locations in Australia with two venues in Melbourne’s CBD, one in Little Collins Street and the other on Swanston Street. The Little Collins Street venue is by far the bigger venue and is housed underground. Before the newer of the two stores, Swanston Street, opened the Little Collins venue usually had lines of people waiting to try the delicious noodle soup or boiled rice dishes along with tea drinks like their milk tea.
Their noodle soups and boiled rice bring that street food feel to Melbourne. With their noodle soups you can pick and choose your desired noodles from a host of options including egg noodles, glass noodles, thin rice noodles, flat noodles, etc. You can choose from a variety of toppings like fish balls, beef balls, pork ribs. All soups are their sweet, salty, sour and umami pork soup, which is worth trying if you have never had a Thai soup before. It is very different to other Asian noodle soup flavors you would experience with Cambodian, Vietnamese and even Chinese soups.
When I tried their noodle soup, I was wowed by the combination of flavors. The bowl is full of pleasant, complex flavors and a mix of so many textures and ingredients.
